Birria

Birria on pizza actually works very well. Braised meat in a spicy beef broth on top of crispy pizza dough is a recipe for a successful partnership.

Inspiration

I've seen Birria Pizza but it's usually just a quesabirria. So I decided to make an actual Birria Pizza.

Ingredients

  • Oxtail 1 lbs
  • Chuck 1 lbs
  • 1/2 onion
  • 3 cloves garlic
  • 1 tsp coriander
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 tsp cumin
  • 3 guajillo chilis
  • 4 ancho chilis
  • 3 arbols
  • water
  • 1/2 cup tomato sauce
  • beef stock 4 cups
  • 450 grams Pizza Dough

Steps

  1. Sear Oxtail and Chuck.
  2. Cook onion, garlic, coriander, salt, cinnamon, cumin, chilis with some water and oil till soft.
  3. Blend the chili mixture together.
  4. Add to pot with oxtail and chuck, tomato sauce, and beef stock.
  5. Braise for 5 hrs.
  6. Preheat oven with baking steel at 550 F.
  7. Prepare pizza dough.
  8. Stretch dough.
  9. Top with low moisture mozzarella, birria meat, and optional Oaxaca cheese.
  10. Bake at 550 F for 8 mins on baking steel.
  11. Take out of oven and top with parmigiano reggiano, cilantro, and olive oil on crust.
  12. Cut into 8 and enjoy!
